Market Street Grill and its Oyster Bar closed their downtown Salt Lake City location permanently on June 30, 2026, after nearly 50 years.

The restaurant opened in 1980 inside the historic New York Hotel building — a 1906 structure on the National Register of Historic Places that had previously served as a soup kitchen — and had a transformational impact on the city’s dining scene. Founded by John Williams, Tom Sieg and Tom Guinney, Market Street Grill was an innovator: it used Salt Lake International Airport to overnight fresh seafood into the landlocked city and onto diners’ plates, a practice that was novel at the time and helped define upscale dining in Utah for decades. The brand is now part of the Mountain West Brands group, which also operates Chuck-A-Rama and Grubsteak.
