SAN ANTONIO – A Texas-based, dairy company is “moo”ving into San Antonio schools.
Dripping Springs Dairy, located about an hour northeast of San Antonio, is a family-owned startup that produces A2-A2 milk, which is a protein that’s known to be easier to digest.
“Milk with A2-A2 protein is the way God created cows,” said Patrick Byrne, founder of Dripping Springs Dairy. “Cows only produced A2-A2 protein, and we, as dairy farmers, overbred cows for more and more production, which gave the cows a genetic mutation. A lot of cows are producing an A1-A2 protein casein, which is what a lot of people who think they’re lactose intolerant can’t digest.”…
