This is one of Fiesta San Antonio’s most recognizable foods, and it’s easy to see why.
What began as a festival favorite has gradually become a year-round staple, with restaurants, bars, and neighborhood eateries across the city putting their own spin on a San Antonio classic.
A Fiesta Favorite That Spread Across the City
The version most people recognize traces back to J.J. “Mr. Chicken” Gonzalez, whose stand at A Night in Old San Antonio, a four-night event during Fiesta San Antonio, helped turn chicken on a stick into one of Fiesta’s signature foods. Gonzalez, who died in 2025 after battling cancer, spent 30 years serving the snack that would become a San Antonio tradition, earning him a place in Fiesta history that continues long after his passing.
