SHREVEPORT, La. — A local culinary artist recently brought Northwest Louisiana’s flavors to a massive audience during a premier national celebration. Chef Niema DiGrazia represented the Shreveport-Bossier region at the ESSENCE Festival of Culture Wine & Food Festival in New Orleans, standing alongside top culinary creators to celebrate the food traditions of Louisiana and the African Diaspora.
DiGrazia brought her unique Afro-Fusion cooking style to a major event called The ESSENCE Cookoff: Reimagining Shrimp & Grits. The competition, organized by award-winning chef Nina Compton, gave DiGrazia a chance to reinvent a classic Southern staple by blending her West African roots, Caribbean flavors, and Southern heritage. Her dish put a spotlight on these deep cultural ties and featured the specific peanut stew recipe that previously earned her a victory over Bobby Flay on the Food Network.
In addition to cooking, DiGrazia participated as a speaker on a panel titled “Taste of the Diaspora.” Alongside other food and beverage experts, she discussed how Africa, the Caribbean, and the American South continue to shape modern food culture.
