Spokane-area restaurants see new ownership and expansion; plus, some other news to sip on

Spring is in full swing, and along with new blossoms on the trees and in gardens around the region, there’s plenty of fresh food news to celebrate.

A popular drive-thru sandwich shop on North Ash Street has gotten a second chance. Sandos closed suddenly in late 2025 but recently reopened under the new ownership of Betty Jessup and Paige Cunningham. The two also own Maple Street Bistro and Fresh & Foraged Cafe, and hopped on the opportunity to take over the sandwich shop when they saw it for sale last August.

During a soft opening on April 6, the stand gave out free sandwiches and coffee. A full espresso bar is a new addition to the stand, as well as pastries from Maple Street Bistro. Since taking over the business with only a simple recipe book listing out ingredients, it’s been a steep learning curve…
