Camillus, N.Y. — Spend enough time in Central New York and you’re bound to cross paths with Toss & Fire.
Toss & Fire Wood-Fired Pizza started as a single tow-behind mobile wood-fired pizza oven in 2015. Since then, it has grown into two sit-down restaurants in North Syracuse and Camillus, a location inside Harvey’s Garden beer hall in Syracuse, an army of three large, bright orange food trucks found at concerts, festivals and other events across Central New York, and a prime location along Chevy Court at the New York State Fair, where the release of the annual menu, often featuring collaborations with other fair vendors, is an event in and of itself.
I’d argue that Toss & Fire is one of the most recognized names for pizza in Central New York — behind perhaps only Twin Trees. But when I visited Toss & Fire’s Camillus location, which opened in the Township 5 shopping center in 2020, it was not after the small, wood-fired pies that Toss & Fire built its brand upon and serves as the backbone for its food truck and state fair business, but rather the other items not available at the trucks, including a pair of regional pizza styles hard to find anywhere else in Central New York…
