PORTLAND, Ore. (KOIN) — A local chef is taking her fine-dining skills and cooking up dishes that are near to her Thai culture.
The Fine O’Char food cart just opened in Oregon City, and the woman running it worked closely with award-winning chef Gregory Gourdet of Kann for the last eight years. Similar to the food there, she’s offering dairy-free and gluten-free options that still pack a punch with flavor.
“I love fried chicken, but how can I make the fried chicken gluten-free and make people love it? The texture and the flavors — all the chicken is, I wash them, I dry them, I brine them before I fry them and marinate them overnight.
