“Unexpected twists” and “sense of fun” drive menu at new sushi spot from acclaimed restaurateurs

A new sushi concept that’s being opened by Michelin Bib Gourmand restaurateurs is set to start serving a wide range of cuisine on April 30 and with fish from around the world, dishes that include ramen with rabbit confit, and a cheeseburger said to be “incredibly delicious,” it’s a spot that’s designed to cater to every palate.

Dubbed Odd Rabbit and opening on Boulder’s Arapahoe Avenue, the team behind Denver’s popular and acclaimed glo Noodle House has been hard at work to create a new spot.

“Odd Rabbit’s menu highlights pristine nigiri, hand rolls, inventive small plates and unexpected twists, all rooted in traditional Japanese technique while embracing a sense of fun,” reads a press release on the matter. And there’s plenty of experience present in the restaurant’s sushi program, overseen by Chef Stephen Nguyen who people might recognize for his work with Temaki Den and Uncle. Per the restaurant, the experience is anchored by “an impressive nigiri selection featuring bluefin otoro, chutoro, and akami, alongside salmon, hamachi, scallop, amaebi, and wagyu.” The hamachi and scallops come from Japan, the tuna is from Spain, the salmon is from Scotland, and waygu is locally sourced from Colorado…
