SARASOTA, Fla. A new chapter is unfolding at Bistro at Sarasota Art Museum as Executive Chef Ben Hiatt introduces seasonal dishes while continuing the restaurant’s connection between food, art, and the Sarasota community.
The museum restaurant is welcoming fall with new daytime menu additions, including a roasted squash, arugula, and toasted hazelnut salad and a za’atar-roasted chicken wrap with beet hummus. The updates come as Hiatt takes on a larger leadership role at Bistro, where he has been part of the culinary team since 2020.
The restaurant’s seasonal direction reflects Hiatt’s approach to cooking, focusing on ingredients, timing, and the connection between a dish and its surroundings. As he explained in the SRQ Daily report announcing his new role, “It’s about where you are and what’s good right now.”
