As nearby restaurants close, Crossroads owner searches for way to stay

KANSAS CITY, Mo. (KCTV) – Jason Mendez and his team opened a vegan-Mexican restaurant concept before the World Cup, betting on neighborhood energy. Staying open in 2026 is its own kind of math, according to Mendez.

“People’s expendable income, it… it trickles downhill,” said Mendez, part owner of Madrina Vegana.

Mendez’s pop-up lease ends in November, and he wants to stay in the area…
