Madison County Food Health Sanitation Program conducted a series of inspections in the Edwardsville area from April 6-10.

- Food employee improperly washed hands.
- Food contact surfaces must be cleaned and sanitized.
- Food contact surfaces and utensils shall be clean to sight and touch.
- Time/Temperature Control for Safety Food is not maintained at 41F, or less.
- Clean Equipment/Utensils/Linens/Single-Use Articles stored incorrectly.
- Equipment shall be maintained in a state of repair and condition that meets the requirements specified under Parts 4-1 & 4-2.
- Clean all non-food contact surfaces frequently to prevent soil accumulation.
- Attachments to wall and ceiling such as light fixtures, mechanical room ventilation system components, vent covers, wall mounted fans, decorative items and other attachments shall be easily cleanable.
- Establishment not in compliance with food allergen training.
