Madison County Food Health Sanitation Program conducted a series of inspections in the Edwardsville area from April 13-17.

- Plumbing needs repair. Repair according to Illinois and local plumbing code.
- Floors, Walls and Ceilings were found in a state of disrepair, or not to be smooth and easily cleanable.

- Frozen fish is thawing while still wrapped in reduced oxygen packaging.

- Time/Temperature Control for Safety Food is not maintained at 41F, or less.
- Equipment shall be maintained in a state of repair and condition that meets the requirements specified under Parts 4-1 & 4-2.

EXO, Edwardsville
- The food establishment is not under the operational supervision of a Certified Food Protection Manager that is present at appropriate times.

- Food employee used bare hands to handle ready to eat foods.
- Food prepared and held in a food establishment for more than 24 hours must be clearly marked to indicate the date or day by which the food must be consumed on the premises, sold, or discarded when held at a temperature of 41F or less for a maximum of seven days.
- The method of Time as a Public Health Control does not have an effective written method to record the point in time when the food is removed from temperature control to the discard time.
- Food shall be protected by contamination by storing it in suitable locations.
