STATEN ISLAND, N.Y. — Insomnia Cookies has finally awakened on Forest Avenue, bringing its late‑night sugar rush to Staten Island after a storefront build‑out that began last August.
The late‑night bakery is slated to soft open Thursday, June 25, ahead of a grand opening celebration on Saturday, June 27. It has already opened briefly at times to greet neighbors and train staff.
Insomnia takes its name from its late-night business model, with warm cookies and delivery stretching well past midnight. The Forest Avenue shop marks the brand’s first Staten Island location.
But the company is no stranger to New York. This is will be Insomnia’s 24th location in the state and one of more than 360 nationwide, offering in-store ordering, pickup and delivery.
Known for its signature warm cookies, the menu includes classic flavors like chocolate chunk and snickerdoodle, along with brownies, blondies, cookie‑ice cream combinations and vegan options. A rotating selection of limited-edition cookies will also be available…
