Twiggy’s Fish and Chips reels Spokanites in with authentic British fare

Outsiders may not have the most favorable impression of British cuisine, but when it comes to fish and chips, many Spokane residents have long been hankering for an authentic “chippy” experience. The wait is finally over with the opening of Twiggy’s Fish and Chips at 1505 N. Ash St.

Co-owners and husband-and-wife duo Mark Twigg and Maureen Torphy decided to open up shop after craving the English-style fish and chips that Twigg grew up on.

“I think you can get really good fish and chips around [here], but not necessarily how we have it,” Twigg says, referring to his childhood in Manchester. “So we just wanted to do it how we like it.”…
