The 30-Minute Casserole I Make Whenever I’m Missing My Midwest Home

In Iowa, there’s a convenience store chain called Casey’s that’s in every small town. Sometimes, as is the case in my small southern Iowa community, there are three or four Casey’s sprinkled throughout town. The eye-catching yellow and red stores have spread like wildfire, and I’m pretty sure it’s because of their gas station pizza kitchens.

Casey’s hand-tossed taco pizza is a fan favorite. Layers of seasoned beef, a sauce composed of creamy refried beans and zesty salsa, and a generous layer of cheese bake on a puffy handmade pizza dough. The pie is finished with crisp lettuce, diced tomatoes, and crunchy taco chips, then drizzled with tangy taco sauce.

Because I no longer live anywhere near a Casey’s, I’ve created my own Midwest-inspired taco pizza—in casserole form.

This 30-minute casserole delivers all the flavors that make Casey’s taco pizza legendary.
