Beef-a-Roo, the legendary Rockford fast-food chain and longtime staple of the community’s restaurant scene, has abruptly shuttered nearly all its locations, including eight in Winnebago County.
Financial issues involving Elysian Capital, a Dallas-based private equity firm and Beef-A-Roo owner since 2019, were blamed.
